Made Passover Muffins

Yes, I'm a professional fiction writer, but THIS is pure fact. I found online a recipe useful for Passover for Diabetics, and made muffins with this fine-ground almond flour. Last year, I didn't think it would work, this year I knew it would, so I did variations with chocolate and cinnamon/spice. This company is expensive, but they deliver good value, on time, with responsiveness on twitter. It's worth the money!

This Pesakh was the first time my husband, who has celiac disease, had knaydlekh in over 25 years. I was able to make them for him with the almond flour.
